Easy Thanksgiving Leftover Recipe

What to do with Turkey leftover ?

I love to eat leftovers the next day after Thanksgiving! I'll share this recipe with you all. Its one of my go to dish. 


Turkey Fricassee.


ingredients: 1 big onion chopped
                    1 big green pepper chopped
                    2 big tomatoes  chopped
                    1/2 cup of coriander
                    1/4 cup olives/capers
                    1 cup of chicken broth
                    2 tablespoon of oil (olive oil )
                    2 or 3 cups of turkey chopped
                    1 can tomato sauce
                    Parsley for garnish

Preparation:

In a pan saute the  onion with olive oil until it is transparent, Add the peppers and the tomatoes and let it cook for about 5 minutes stirring occasionally. Then add the olives and capers and the coriander. Add the meat, the tomato sauce, and the chicken broth. Cook for 5 to 7 mins still stirring occasionally and remove it from the heat. Last sprinkle the parsley if you like.

Can serve over rice, mashed potato, over pasta, tacos,or a delicious sandwich just add the cheese. I usually will have it with arroz con habichuela (rice and beans).

Favorite Oatmeal Recipes

These are my favorite oatmeal recipes. Its very healthy and full of fiber so you wont be hungry till your next meal.

MUESLI

1 Cup Oat
1 Tablespoon brown sugar
1/2 cup almond milk
2 tablespoon raisins
1/2 banana (sliced)
1/2 cup vanilla yogurt


Put together oat and milk in a jar and let it stand over night in the refrigerator.
Before serving stir in the yogurt, sugar, raisins, banana, and cranberry.
If you like you can sprinkle flax seed too.

Baked Apple Oats

3 cups of old fashion oats
1/3 cup of brown sugar
4 cup fat free milk
1 teaspoon cinnamon
1/4 teaspoon salt
2 medium apples chopped (2 cups)
1/2 cup chop mixed nuts
1/2 cup of dried cranberries

Heat oven to 350 degree

Mix together the oats, raisins, sugar, cinnamon, milk, and apples
Bake uncovered 40-45 minutes.sprinkle mixed nuts and cranberries over the top

Oatmeal Energy Breakfast

By far my favorite!

1 cup old fashion oats
1 cup of water

1/4 cup of milk or almond milk
1 scoop of protein powder
1 banana
1 tbsp of peanut butter


Pour the water into a pot. Place it over high heat and bring to a boil. Add the oats and lower the heat to low setting. Cook the oats 7 to 10 mins, stirring occasionally, until it has a creamy consistency. Then remove it from the heat then mix in the milk and protein powder. Next add the toppings- peanut butter and sliced banana. You can sprinkle brown sugar or honey if you like as well.

The Beauty in Oatmeal

Oatmeal has a lot of benefits. When I was a child oatmeal was disgusting and I avoided it at all cost. Trying to eat a bowl of oatmeal was utter and cruel punishment. It made me cry and cry. It wasn't till I was pregnant with my first child that oatmeal became my craving. Out of all cravings I could get it had to be oatmeal. For breakfast, lunch, and dinner even for snack it was oatmeal. Couldn't get enough of it. What I didn't know is how healthy and beneficial oatmeal really is!

Here are the great benefits to oatmeal:


1- Oatmeal is a very cheap food and anyone can afford to buy it.

2-It provide a high level of protein, fiber, and it is very low in fat. I remember I gain only few pound during my 3 pregnancies.

3-It can reduce the risk of diabetes. It contains high level of magnesium, and it's a complex carbohydrate.

4-Oatmeal contain beta-glucan that helps to lower the bad cholesterol and reduces the risk of cardiovascular disease.

5-Great for weight loss. It is high in fiber so it can keep you full longer till your next meal and 1 serving is only around 150 calories.

6-It is gluten free which is great for people with celiac disease and anyone with gluten sensitivity.

7- Oatmeal is also an excellent product for the skin. It can reduce acne and it is an amazing beauty enhancer. Oatmeal can  prolong the youthfulness of the skin and reduce inflation that leads to premature aging. Oatmeal baths can exfoliate, soften and reduce itchiness.

Oatmeal has many uses from your head to your toes.

Here is my favorite body scrub:

1/2 cup ground oat (just use a blender)
1 teaspoon brown sugar
1 tablespoon warm milk- and coconut oil. 

Just mix it all together and secure it in a jar. Use before taking shower.

Vital Vitamin D

The fabulous Vitamin D.

Vitamin D is the cheapest one of all the vitamins because it comes directly from the Sun. 

Just 10 to 30 minutes exposure to sun light between 10:00 am to 3:00 pm and our body 

will process and manufacture Vitamin D on its own.

Vitamin D fortifies, regulate, and regenerate the absorption of calcium and phosphorus in 

the bones. The Vitamin D also contributes to  many other body functions and for that 

reason it is called the hormone vitamin. It strengthen the immune system and protects the 

body from sickness like osteoporosis, cancers, diabetes, blood pressure, and Alzheimer,  

and reduces the chances of a heart attack. Vitamin D promotes healthy body weight, helps 

to reduce depression, reduce asthma, and inflammation. There are two types of vitamin D 

which is vitamin D3 (produced by our bodies) and vitamin D2. Vitamin D2 an ergocalciferol 

is commonly found in vegetables and mushroom and it is water soluble. You can find 

vitamin D in food like eggs, milk, cheese, salmon, meat, beans, and nuts.

Vitamin D can interfere with some medications and too much of it can lead to toxicity. Talk 

to your doctor before beginning any medication.
